Company Introduction

Our client is a leading operator in the hospitality industry.

Job Responsibilities and Duties

  • Reports directly to the Executive Chef;
  • Provides functional assistance and direction to the kitchen operation;
  • Coordinates functions and activities with the Food and Beverage Service Manager/Events Manager;
  • Supervises the functioning of all kitchen employees, facilities, costs and contributes to maximizing the overall Food and Beverage profit;
  • Controls and analyses the quality levels of production and presentation, guest satisfaction, payroll and food costs, cleanliness and hygiene;
  • Ensures optimum performance of all the above areas;
  • To be responsible for the production, preparation and presentation of all food items to ensure highest quality at all times;
  • To control stocks for daily use in restaurants, and to ensure service requirements are met;
  • Conducts, under the guidance of the Human Resources Manager such functions as interviewing, hiring, employee orientation, on the job performance, coaching, counseling, and suspension if necessary to ensure appropriate staffing and productivity;
  • To develop formal training plans and implement on the job training sessions for the kitchen brigade;
  • Attends and contributes to all internal briefings/meetings and Food and Beverage departmental meetings, amongst others;
  • Participates in the preparation of the Food and Beverage department budgets and goals;
  • To ensure that hygiene, grooming and appearance standards are met;
  • Conducts all administrative work required;
  • Works closely with the Purchasing Manager in determining the minimum food par stocks. Ensures the completion of the market list in accordance with quality and quantity standards. Inspects all perishable food items received for quality;
  • Comply with Company Grooming Standards;
  • Comply with Time and Attendance Policies.

Experience

  • Previous experience working in a similar role and environment is a must.

  • Highly organized and smart in appearance;
  • Excellent verbal and written communication skills;
  • Able to manage a team;
  • Good knowledge of HACCP;
  • Able to manage costs;
  • Flexible in hours;
  • Creative in ideas.
